Morisoba is a unique style of ramen which noodles and soup are served separately to dip and eat. This style of ramen is now generally called Tsukemen in other ramen shops. As it is different from an ordinary type of ramen which noodles and soup come together in a bowl, you can even more focus on enjoying their special noodles.
Taishoken is widely known as the first shop to start tsukemen style ramen in Japan since 1955.
The thick noodles made from their own specially blended flour have smooth and chewy texture. This special noodle was created through the long process of trial and error to find the noodle that best matches with their soup.
Their house made chashu is marinated in the special sauce and aged in low temperature to bring out the original sweet flavor of the meat.

Their noodles are also special. Sea bream fish meat kept in low temperature are smoked and roasted next, then added to the dough together with tapioca to make their own special noodles.
We don't see sudachi as a ramen topping so often but it matches very well. Chashu Tanmen of Saiho is topped with chashu made from herb-fed pork's shoulder butt. It is roasted carefully in full-fledged oven to keep the delicious juicy flavor inside the meat with chewy texture and fragrant aroma.

Among the three flavors of Tsuyu-soba such as Mala, Miso and Shio(salt), I think Shio is the best to enjoy the original flavor of shrimps in delicious seafood broth.

On top of that,“Ebi Paitan Tsuyu-soba(Shio)”is my best of all Shio flavored menus.
